Tofu is a great source of proteins & calcium and is low in calories & fat. In fact, firm tofu is such a versatile ingredient, you can braise, stew, stir-fry it or even deep-fry it to crisp.
Here’s an all-vegetarian tofu recipe that can be enjoyed by all. Of course, for the carnivores, you can always add depth to these patties with a little minced prawns or chicken too.
Tofu Egg Patties Recipe
Ingredients
1 carrot, peeled & grated
1 tsp minced garlic
1 pc thumb-size ginger, grated
300g firm tofu, drained & crumbled
a small handful of spring onions, sliced
2 eggs, lightly beaten
2 tbsps sesame oil
2 tbsps olive oil
salt & pepper to taste
Instructions
1. Combine all the ingredients (except sesame & olive oil) in a large bowl. Season with a little salt and pepper.
2. Heat sesame oil and olive oil in a large skillet over medium heat. Once hot, pour in the tofu batter and use a spatula to press the batter down. Cook for 3-4 minutes till it becomes firm and then divide/cut into pieces using the spatula.
3. When the bottom of the patties turn a nice golden brown, flip the patties to cook the other side.
This is actually a lazy way of cooking this dish. Normally I would use metal pastry rings or cookie cutters to set the tofu patties in shape but this would have to be done in several batches which will be time-consuming. So I just poured everything into the skillet like an omelette and indeed, the final product does look like a tofu omelette.
Serve these vegetarian patties with some sweet chilli sauce. Yummy!
