This Teriyaki Chicken Don is one of my favourite don recipes because teriyaki chicken almost never goes wrong. It tastes delicious on its own or even when paired with noodles, scattered on top of a pizza or wrapped in a sandwich.
Sometimes, the teriyaki chicken that we get from Japanese restaurants here may come with overly rich and salty sauces. Hence I prefer to use reduced-sodium light soy sauce (I recommend Kikkoman brand) to make this at home so even when I over-reduce the sauce, I wouldn’t end up with a super salty one.
Chinese Wine Works Too
I have used sake in this recipe but if you don’t have it, you can substitute it with a more economical option of Chinese cooking wine like Shao Hsing or Hua Tiao. No point buying sake just for this recipe if you don’t even drink it.
