Taiwan Sausage Spaghetti Recipe

I never would have thought of stir frying spaghetti in an Asian style like how we’d do Chinese fried noodles till my mother-in-law whipped up a quick and tasty lunch of stir fried fusilli with char siu when I first came by her house in England years ago. It works in a similar way like a fried rice as it’s so versatile cos’ we can just use any type of pasta we like with whatever ingredients we fancy. So this dish is one of those that I just came up with by using leftover ingredients in the fridge. Feel free to substitute the protein with frankfurters, Chinese sausages, shredded chicken breast meat, etc. Just look into your fridge and see what you have – I’m sure you can also come up with different interesting combos. The key is – keep it simple and hassle free – so this makes a perfect quick meal for one or you can make in advance for next day’s lunch. Enjoy this Taiwan Sausage Spaghetti Recipe! 🙂

Taiwan Sausage Spaghetti Recipe

Taiwan Sausage Spaghetti Recipe

Ingredients (serves 2)
200g spaghetti, cooked according to packet instructions
150g Taiwan sausages, thinly sliced
1 carrot, peeled & julienned
100g cherry tomatoes, halved
2 cloves garlic, finely chopped
1 1/2 tbsp oyster sauce
dash of light soy sauce
1 tsp coconut oil

Instructions
1. Heat oil in pan and lightly brown the Taiwan sausages. Remove and set aside.
2. In the same pan, saute garlic till fragrant. Add carrots and tomatoes and stir fry for a minute.
3. Add the spaghetti, oyster sauce and light soy sauce. Stir fry till well combined.
4. Return the sausages to the pan and stir to combine.
