A simplified version of satay chicken without the extra hassle and work of skewering the meat and grilling them. Plus I would say this is a healthier recipe too because the skin and fats from the chicken have been trimmed and removed. Also, it’s not heavy-handed with sodium or seasonings as the different spices used are the heroes of the dish that really bring out the essence of the satay flavour.
If you like, you can also make a separate satay peanut sauce (click the link for recipe) for dipping, otherwise the sides of cucumber, pineapple and red onions would be too bland to be eaten on their own.

Stir Fried Satay Chicken Recipe
Ingredients (serves 2-3 as one of few side dishes)
300g boneless chicken leg, skin removed, sliced into small pieces
1 tbsp sunflower oil
sliced cucumbers, pineapples & red onions as sides
Spice paste:
1 tsp ground coriander
1 tsp curry powder
1/2 tsp ground turmeric
1 tsp ground cumin
1 tsp ground paprika
1/2 tbsp brown sugar
1 tsp chilli powder
1 tsp sesame oil
10 shallots, peeled
1/3 tsp sea salt
Instructions
1. Combine all ingredients for the spice paste in a food processor and blend till fine.
2. Marinate the chicken with the spice paste for at least half hour.
3. Heat oil in pan and stir fry the marinated chicken for about 10-12 minutes till cooked through.
4. Serve with sliced cucumber, pineapples and red onions on the side. Enjoy!
