It’s Veggie Friday! And that’s why I am posting my 2nd vegetable recipe of the day 🙂 Are you into eggplant (brinjal/aubergine) dishes too? Check out my healthy Steamed Eggplant Recipe that I had just published earlier today.
In the past, I would stir fry mushrooms with either broccoli, cauliflower or kai-lan (Chinese broccoli) but since the cabbage family and I are no more friends (because of my thyroid condition), I’m using lettuce as an alternative. Crisp tender lettuce with earthy mushrooms and a subtle sesame oil fragrance – not too bad 😉

Stir Fried Lettuce Recipe
Ingredients (serves 2)
1/2 head iceberg lettuce, sliced
100g brown shimeji mushrooms
1 tsp olive oil
dash of sesame oil
light soy sauce to taste
Instructions
1. Heat oil in pan and stir fry mushrooms till tender.
2. Add lettuce and stir fry till the leaves start to wilt slightly.
3. Season with light soy sauce and add a dash of sesame oil for extra aroma.
