I used to eat a lot of steamed egg (see my recipe here) whether it’s with porridge at home or when I get a takeaway from the mixed rice stall but it can get really boring over time as it’s always the same smooth and silky texture. This time I wanted to experiment a new steamed dish with a bit more texture and bite to it so I got together what I could find from the fridge and made this healthy and delicious steamed minced chicken dish. You can substitute the ingredients with whatever you prefer like minced pork, prawns, leeks, mushrooms, black fungus, etc. You never know what you can come up with.
Steamed Minced Chicken with Broccoli & Egg Tofu Recipe

150g minced chicken
2 tubes egg tofu, crumbled
1 carrot, peeled & julienned
1/2 head of a small broccoli, cut into tiny florets
1 tbsp oyster sauce
1/2 tbsp fish sauce
1 tsp sesame oil
dash of white pepper
chopped spring onions
Instructions
1. Mix all ingredients in a bowl and chill in fridge at at least an hour.
2. Transfer meat mixture to a steaming dish, pressing it down to form a patty shape.
3. Steam for 10-12 minutes at high heat till chicken is thoroughly cooked through.
4. Garnish with spring onions and serve.
This is really easy to make with no complicated seasonings – just require the usual. I love the steaming liquid that is salty and sweet and goes really well with steamed white rice. The chicken is also moist and tender and the broccoli and carrot just give it that extra crunch and sweetness. Bon appetit!
