I made a Low Fat Portobello Mushroom Soup for lunch and thought I should also make some open sandwiches with that freshly baked rye loaf that I bought. This Spicy Prawn and Avocado Sandwich is really easy to assemble with minimal cooking required. I chose to quickly blanch the prawns in boiling water just to keep this all healthy. Alternatively, you can stir fry them with some olive oil or even grill them to give them a light smoky aroma. Then it’s all about spicing up that avocado and using it as a spread. Enjoy!
Spicy Prawn and Avocado Sandwich Recipe
Ingredients (makes 6)
6 large sized prawns, shelled with tails intact & blanched in boiling water
1 ripe avocado, peeled & seeded
1 red chilli, sliced
2 cloves garlic, finely chopped
juice from 1 lime
salt & freshly ground black pepper
lettuce leaves
toasted rye bread slices
dried chilli flakes as garnish
Instructions
1. Combine the avocado, chilli, garlic and lime juice in a bowl and mash everything together. Season with salt & pepper to taste.
2. Place a lettuce leave over every rye bread slice and spread the avocado mixture on top. Top with a prawn each and garnish with chilli flakes.
3. Serve the sandwiches on their own or with a soup of your choice.
