Healthy Rice Bowl with Yogurt Poppy Seed Dressing

As many of us are becoming more health-conscious these days, we are also paying more attention to what we eat. Eating out while at work is no longer that bad with all the healthy food joints sprouting up around Singapore especially in the CBD area. We are indeed so spoilt for choices. From hearty soup and salad to wholesome poke or rice bowl, there is simply no more room for excuses. 😉

Endless Possibilities – Every Day A Different Bowl

One good thing about making such a rice bowl at home is that you can basically use any ingredient you like. There are endless combinations – whatever you can think of. What I have used in this recipe are just a few to name.

And if you ever run out of ideas, I have a suggestion. Go to the websites of those poke bowl or salad places and check out their menus that have extensive lists of ingredients. You can easily assemble a different bowl for each day. 😆

For this recipe, I also made a healthy dressing that’s tangy and creamy with extra textural crunch from red bell peppers and poppy seeds. Give it a try! 😉

  • 300g beef rump steak
  • 1/2 tbsp sunflower oil
  • salt & freshly ground black pepper
  • steamed pumpkin
  • kidney beans
  • avocado
  • pumpkin seeds
  • cooked red & brown rice
Sauce:
  • 1/2 small red bell pepper, diced
  • 6 tbsp Greek yogurt
  • 2 tbsp reduced fat mayonnaise
  • 1 tsp poppy seeds
Combine all the sauce ingredients in a bowl and stir to mix. Chill in fridge till ready to use.
With a kitchen towel, pat the steak dry and rub it with sunflower oil.
Season the steak with salt and pepper on both sides.
Heat a frying or griddle pan over medium-high heat. Add the steak and cook for 3 1/2 minutes on each side for medium.
Flip the steak only once. Remove the steak when done, wrap with foil and rest for 3-5 minutes before slicing it.
To assemble your bowl, place the cooked rice on the base and arrange the rest of the sides on top.
Spoon the dressing on top of the rice bowl and serve.
