Pan-Fried Curry Pork Ribs Recipe
Ingredients (serves 2-3 as one of few side dishes)
500g pork prime ribs (about 8 pieces)
1 red onion, peeled & cut into quarters
4 cloves garlic, peeled
2 tbsp chicken curry powder
1/2 tsp salt
1/2 tsp light soy sauce
1 tbsp Chinese cooking wine
1 tbsp brown sugar
2 tbsp sunflower oil
Instructions
1. Combine the red onion and garlic in a food blender or chopper and process till fine.
2. Marinate the ribs with the onion-garlic mixture, curry powder, salt, light soy sauce, wine and sugar. Leave in the fridge to chill for at least 4 hours or overnight for best results.
3. Heat oil in pan and pan-fry the ribs for 15-20 minutes or till golden brown on all sides.
