Recently I had been trying to experiment with different combinations of fruits and vegetables to make a variety of healthy sides just so I wouldn’t have to repeat the usual. Inspired by my favourite parma ham and rockmelon pairing, I just wondered if the melon would go with a simple pan-fried chicken breast. Seemed really plain especially when there wasn’t any gravy but this was tasty as the melon was so sweet and juicy, it was like eating a healthy yet wholesome chicken fruit salad. Perfect if you’re making this for a solo meal because it only requires few ingredients and it’s just easy to prepare. Convenience is the word!
Pan-fried Chicken with Rockmelon Salad Recipe
Ingredients (serves 1)
1 piece skinless chicken breast
salt & freshly cracked black pepper
1/4 cup diced rockmelon
1/4 cup diced cucumber
1 small tomato, diced
vegetable oil
Instructions
1. Combine the rockmelon, cucumber & tomato and chill in fridge till ready to use.
2. Season the chicken breast with salt and pepper on both sides.
3. Heat a little vegetable oil in pan and pan-fry the chicken breast till cooked through and golden brown on both sides.
4. Serve with the rockmelon salad.
Tip: If you like this dish with a little sauce, try mixing the rockmelon salad with some coleslaw dressing or mayonnaise.
