Every time I cook lotus root soup, I would get leftovers of lotus root as it’s often sold in huge sizes in the supermarket and it’s just too much for a pot of soup. So these days, I would first slice up a small bunch and keep in the fridge for next day to prepare these Minced Pork Patties with Lotus Root as a dish for dinner.
We love dipping these patties in sweet chilli sauce. The lotus root and carrot strips give a nice crunch to the meat. Absolutely delicious. Enjoy!
Minced Pork Patties with Lotus Root Recipe
Ingredients (serves 2-3)
200g minced pork
half a small carrot, julienned
15 slices lotus root
1 stalk spring onion, finely chopped
2 tsp light soy sauce
1 tsp sesame oil
dash of white pepper
pinch of salt
1 tsp corn flour + extra for dusting
Instructions
1. Marinate minced pork with light soy sauce, salt, sesame oil, pepper and corn flour. Add carrot strips & spring onions and mix well. Chill in fridge for half hour before cooking.
2. Arrange lotus root slices on a big plate. Scoop a heaped teaspoonful of meat mixture onto every slice of lotus root and gently press down with your fingers so that the meat mixture adheres to the lotus root.
3. Heat oil in pan. Dust corn flour over the patties and pan fry till both sides turn golden brown.
