I was making some chicken dumplings earlier and had a small amount of minced chicken left so I decided to do an impromptu omelette dish. I don’t really consider this as a recipe per se since it doesn’t involve any complicated prep or require any special seasoning but I just thought I’d share how I ‘decorated’ the egg like a pizza instead of adding the ingredients into the egg mixture like how I’d normally do with other omelettes. And I just love that green and red Christmasy feel on top, haha. I love eggs, do you? Enjoy!
Minced Chicken Omelette Recipe
Ingredients (serves 2)
2 large eggs
80g minced chicken
1 fresh red chilli, deseed & slice
2 stalks spring onion, chopped
salt
freshly cracked black pepper
vegetable oil
Instructions
1. Beat the eggs and season with a pinch of salt and pepper.
2. Heat a little oil in small pan and pour in the egg mixture. Let it cook over medium heat and flip over when the bottom has turned golden brown. Remove and transfer to a plate.
3. In the same pan, add a little more oil and stir fry the minced chicken till cooked through, breaking up lumps if any with the spatula. Season with a pinch of salt.
4. Transfer the minced chicken over the omelette and sprinkle the spring onions and chillies on top.
