I think the king oyster mushroom really makes a great vegetarian substitute to meat because its texture is firm with an excellent bite and it doesn’t have a strong earthy smell like its other mushroom friends. Use it in stir fries or grill them on a griddle pan – yummy! I’ve been buying these lovely king oyster mushrooms from my neighbourhood minimart that costs just $1.20 per pack of 200g so you can imagine how cheap it is to make this filling meal for two (half a pack of spaghetti $1 + king oyster mushrooms $1.20 = $2.20). Incredibly affordable, isn’t it? This dish would probably be my top choice for a budget meal anytime. King Oyster Mushroom Aglio Olio Recipe
Ingredients (serves 2)
250g spaghetti, cooked according to packet instructions
200g king oyster mushrooms, thinly sliced
1/2 bulb garlic, finely chopped
1 + 1 tbsp olive oil
1 tbsp unsalted butter
1 tsp dried chilli flakes
Instructions
1. Heat 1 tbsp olive oil in pan and melt the butter in it till frothy. Add in the mushrooms and stir fry till they are slightly tender.
2. Add 1 more tbsp of olive oil, garlic and chilli flakes and quick stir till fragrant.
3. Toss in the cooked spaghetti and stir thoroughly.
