Putting my microwave to good use before it becomes a neglected appliance. 🙂 Hence I’m making Keto Brownie Mug Cake today! It’s super delicious and super easy to make. Only takes about 1 minute in the microwave.
As you can see from the pics below, there is no sight of a mug, lol. I actually used a 12cm diameter ramekin but of course you can use any mug or bowl so long it’s microwave-safe.
The best thing about this recipe is that it’s keto-friendly hence it’s low in carbs and it’s sugar free. So I can enjoy this usually-sinful treat without guilt yet it doesn’t compromise on quality or that chocolatey taste you’d get from a regular brownie.
Timing will vary depending on your microwave
One issue about making a mug cake in the microwave is time management. Different brands of microwave work differently so if it’s your first time using the microwave to make a cake, you may want to start off with 30 seconds first and slowly increase the time in blocks of 15 seconds until you get the texture you like. I did mine for 60 seconds and it had a moist sponge cake texture as above. 45 seconds – it was still a little too wet. 90 seconds – it became too dry. All in all, it’s really about trial and error.

- 2 tbsp unsweetened chocolate chips
- 10 walnuts, chopped
