It looks exactly like our usual mashed potatoes but it’s definitely lighter than carbs-packed spuds. Texture wise, this mashed cauliflower has that same creamy consistency that just melts in the mouth. You can just season it like the way you normally do for mashed potatoes. I like mine with sour cream and mayonnaise. What about you? 🙂
Healthy Mashed Cauliflower
Ingredients (serves 3-4)
1 head cauliflower approx. 750g, cut into florets
2 tbsp skimmed milk
250g light sour cream
1 tbsp light mayonnaise
pinch of salt
Instructions
1. Steam the cauliflower florets on high heat for about 10 minutes till soft. Leave to cool slightly.
2. Using a food processor, blitz the cauliflower florets to small bits.
3. Gradually add milk while continuing to blend till it reaches a puree consistency. Add sour cream & mayonnaise and blend till well combined.
Love mashed cauliflower and don’t get why some folks turn their nose up at it. ??
I guess it’s because of the texture that is not as creamy as potatoes? I didn’t like it at first when I made it but got used to it after trying a few times.
