Not only it looks pretty, this Swedish-version of roast potatoes is very easy to make. It makes a great starter or side for any meal. Or simply add your favourite toppings like bacon or cheese and have it on its own.
Hasselback Potatoes Recipe
Ingredients
russet potatoes, washed and patted dry
salt
freshly ground black pepper
garlic powder
olive oil
Instructions
1. Preheat oven to 220 deg C.
2. Place the potato (length-side) against a wooden spoon. Starting from one end, carefully slice the potato (approx. 3mm thickness) without cutting through completely (see picture below).
3. Once done, rub salt, pepper and garlic powder all over each potato as well as in between the slits.
4. Drizzle olive oil over the potato and bake for 40-45 minutes.
You may be wondering why I have not specified the amount used for the salt, pepper, garlic powder and olive oil because I just played it by ear according to my preference. I probably used about 1/2 tsp salt, 3 dashes of black pepper, 3 dashes of garlic powder per potato with a generous drizzle of olive oil. If you like it salty, just add more salt. Or if you want a little more punch, you can add some minced garlic too.
The roasted potatoes had a slight crisp on the outside while the inside was soft and moist. Very addictive once you tasted it! Bon Appetit!
