Inspired by the Western Fried Rice from West Grill Station that had me coming back 3 times in 2 weeks. It was just a very humble dish of ham fried rice to be honest but the outlet in my neighbourhood did it so well, I could taste wok hei in every mouthful of the fried rice. Better than many other fried rice from tze char stalls in fact. And it was extremely comforting for some reason. ?
I don’t consume ham or cured meats regularly (and I don’t encourage anyone to eat too much of them too). But since the Western Fried Rice I ate had ham in it, I thought I would do the same for this Ham Fried Rice Recipe. Perhaps that was how the name ‘Western Fried Rice’ came about anyway, not just because it was ordered from a Western food stall.
I chose to use picnic ham which had a lovely pinkish hue. And I also added mixed vegetables and red pepper just to give the fried rice some vibrant colours. Otherwise, the red and brown rice would look too dull.
Easy and quick to make. Perfect for a weekday dinner. ??
- 4 portions cooked brown rice
- 6 slices picnic ham (approx. 150g), diced
- frozen mixed vegetables
- 1 red pepper, diced
- 3 eggs, beaten
- 3 cloves garlic, peeled & finely chopped
- 2 tsp light soy sauce
- pinch of salt
- few dashes of ground white pepper
- 2 tsp olive oil
- chopped spring onions as garnish
