A fry-up lunch is almost non-existent in my culinary journey to date as I normally prefer to stir-fry, oven-bake or steam. So when a fried chicken craving hit me and I only had pork chops in the freezer, fried pork chops naturally came to mind. And since I was already planning to use (lots of) oil for the frying, I decided to throw in onion rings as a side. This was my lunch so my husband could only drool over the pictures which I sent across to him via Google Hangout 😉
Fried Pork Chops with Crispy Onion Rings Recipe
Ingredients (serves 1-2)
2 bone-in pork chops
1/4 tsp salt
1/4 tsp freshly cracked black pepper
1/4 cup plain flour
1/4 tsp cayenne pepper
1/4 tsp paprika
1/2 tsp garlic powder
1 tbsp unsalted butter
1/2 cup vegetable oil for frying
Instructions
1. Combine the flour, cayenne pepper, paprika and garlic powder in a dish.
2. Season both sides of the pork chops with salt and pepper. Dredge each pork chop in the flour mixture, making sure it is well coated on both sides and set aside for frying.
3. Heat vegetable oil over medium fire and melt the butter in it. Fry the pork chops till both sides are golden brown and crispy. Reserve the oil for frying the onion rings.
And for the onion rings?
Ingredients
1 large red onion, very thinly sliced
1 cup low fat milk
1 cup plain flour
2 tsp garlic powder
1/4 tsp paprika
1/4 tsp salt
a few dashes of freshly cracked black pepper
Instructions
1. Soak the onions in milk. Set aside.
2. Combine flour, garlic powder, paprika, salt and pepper in a dish. Dredge the onions in the flour mixture, shake off the excess and fry till golden brown and crispy in the same oil that was used to fry the pork chops earlier.
And here you are, a plate of freshly fried tender pork chops and crispy onion rings served with a simple side salad. Worth every effort because this is just dynamite! The ultimate comfort food that just explodes in flavours. Are you craving for some too? 😉 Bon appetit!
