Have you ever eaten mashed avocados but thought they tasted like boiled eggs? Probably that’s why I love avocados a lot, lol. I often substitute mayonnaise or other store-bought sauces with avocados to make this creamy, buttery yet heart-healthy dressing for most of my salads.
This is pretty much a high protein & low carb type of salad which is DELISH especially if you love eggs, bacon and avocados because everything just worked so well in this. I actually disposed one of the two egg yolks as I try not to consume more than 1 yolk at a time. Leave it behind if you like your yolks 🙂 This is so easy and really quick to make. Egg, Bacon & Avocado Salad Recipe
Ingredients (serves 1)
2 hard-boiled eggs, coarsely chopped up
2 strips back bacon, fried and cut into small pieces
1 ripe avocado, diced & lightly mashed
1 small tomato, diced
juice from 1/2 lemon
1 tbsp sunflower seeds
Instructions
1. In a bowl, add all ingredients except sunflower seeds. Stir till well combined.
2. Sprinkle sunflower seeds on top and serve.
