I love prawns but I just hate eating them in restaurants especially when they are served in whole because it is such a hassle to peel the shells. Therefore I thought I would try making deep fried prawns that would be so crispy and crunchy, we could just devour the whole thing. Now that’s one good way to reduce food waste. 😉
Trim away the tip portion of the prawn heads where the eyes are. The tip area can be quite sharp so be careful when you’re handling the prawns. But if you don’t mind eating the eyes and all, skip this step. Personally, I don’t like to eat prawns with their eyes staring back at me, haha.
I used tapioca flour for the coating base which worked perfectly for this recipe. Also added spices such as curry powder, chilli powder and 5-spice powder to give it extra punch. Enjoy!
- 24 medium-sized grey prawns
- 100g tapioca flour
- 1 tsp each salt & ground black pepper
- 1 tsp each 5-spice powder, curry powder & chilli powder
- sunflower oil for frying
- parsley leaves as garnish
