Panko is just so versatile, you can basically use it with anything that you’re thinking of frying up. I had some beautiful slabs of sutchi fish fillets which I split into 2 meals. Pan-fried one batch and shallow-fried the other. This is the recipe for the shallow-fried one. Serve with some tartar sauce or sweet chilli sauce, it’s really scrumptious! And if you have some fries or chips to go with it, you can easily turn this dish into a hearty fish and chips too. Enjoy!
Crispy Fried Sutchi Fish Recipe
Ingredients (serves 2)
2 sutchi fish fillets
1 cup panko breadcrumbs
1/2 cup plain flour
1 large egg, beaten
salt & freshly cracked black pepper
vegetable oil for frying (I use sunflower oil)
steamed baby potatoes & broccoli as sides
Instructions
1. Season both sides of the fish fillets with salt and pepper. Dredge the fish fillets in flour and then dip in the egg mixture. Coat fully with panko breadcrumbs.
2. Shallow fry the fish fillets till exterior is golden brown and crispy. Drain on kitchen towels to remove the excess oil.
3. Serve with sides of your choice.

Hi Nellyn, panko is just a name for Japanese style bread crumbs that are coarse & flaky. It comes in various brands that you can get from any supermarket here. I like the Ottogi brand which is made in Korea and you can get it from NTUC Fairprice or Cold Storage.
