I don’t normally fancy those packet imitation crab sticks that much because they are just like artificially-flavoured & artificially-coloured fish cakes. However, when I came across this crispy crab stick crackers at a temporary makeshift snacks stall in my neighbourhood, I thought it would be fun to try making the same at home. And yes, so I bought a whole big packet of crab sticks from the supermarket and made a big bowl of crackers out of it (shall share the recipe right after this post). I had a couple of sticks left which I used to make this sweet & spicy crab stick salad for lunch too. It’s pretty refreshing. Easy and quick to make. Give it a try!
Sweet & Spicy Crab Stick Salad Recipe
Ingredients (serves 2)
100g crab sticks, soaked in hot water for 10 minutes & then hand-shredded
chinese lettuce leaves, roughly cut up
1 cucumber, julienned
1 carrot, julienned
2 tomatoes, wedged
2 hardboiled eggs, quartered
Dressing:
1 tbsp fish sauce
3 tbsp sweet chilli sauce
1/2 tbsp white rice vinegar
1 tbsp grated ginger
juice from 1 big lime
Instructions
1. Arrange the ingredients neatly on a serving plate and spoon the dressing on top.
2. Toss thoroughly and serve.
