Chicken Stroganoff & Garlic Butter Rice Recipe

I’m a big fan of MasterChef Australia and I never failed to watch the various seasons when they were aired on the Lifetime channel. All the dishes that were whipped up by the contestants in the show often inspired me to create something similar at home but with my own personal twist so it’s not just an everyday recipe. Someone did a beef stroganoff with pasta in one episode and suddenly I had an idea to do a chicken one instead and I wanted to pair it with some sort of flavoured rice so it would not be a boring ‘dish + rice’ type of food. And since I had garlic, butter and raisins at home, it had to be fragrant garlic butter rice!

Chicken Straganoff and Garlic Butter Rice 2

Chicken Stroganoff Recipe

Ingredients (serves 2)
300g chicken fillet without skin, cut into strips
200g white button mushrooms, thinly sliced
1 large onion, sliced
250g reduced fat sour cream (at room temperature)
salt & freshly cracked black pepper
chopped parsley as garnish

Instructions
1. Heat some olive oil in pan and pan-fry the chicken fillets over medium heat till cooked through and golden brown. Remove and set aside.
2. In the same pan, saute the onions and then add the mushrooms. Stir fry till tender.
3. Return the chicken to the pan and season with salt and pepper.
4. Turn off heat and add in the sour cream. Stir till sauce thickens to a creamy consistency.


Garlic Butter Rice Recipe

Ingredients (serves 2)
2 cups freshly cooked white rice (kept hot in rice cooker)
2 tbsp butter
1/2 bulb garlic, finely chopped
handful of chopped parsley
handful of raisins

Instructions
1. Heat a little olive oil in pan and pan-fry the chopped garlic till golden brown and crisp.
2. Add the garlic and the rest of the ingredients to the rice. Mix thoroughly till well combined.

And serve the chicken stroganoff with the garlic butter rice on the same plate!

Chicken Straganoff and Garlic Butter Rice

I loved the fragrance of the fried garlic and parsley in the light, buttery, fluffy rice and the raisins just gave it more bite and texture plus a little sweet perk. The chicken stroganoff was really creamy but not cloying and really complemented the flavoured rice. Easy to prepare. Not expensive to make. Go try it! Enjoy!
