I hope those of you residing in Singapore are keeping well and healthy. My sinuses are acting up like crazy, thanks to the haze that seems to be getting worse again today ?
I’m trying to refrain from eating heaty stuffs cos’ my throat is just so uncomfortable these days so I’m mainly craving for simple fare like a homemade chicken soup which I think is one of the most effective remedies for times when I’m feeling under the weather. The folks gave me a bag of chicken carcasses yesterday because they had been buying a lot of chickens for their cat, Smartie who only eats steamed chicken and not fish or dry food – so posh! Haha. I used those chicken bones to cook up a big pot of chicken broth and with that, I also made this one-pot stew that’s not only filling and comforting but healthy and nutritious as well. A perfect dinner recipe for this hazy weather! Take care peeps! And don’t forget to drink loads of water!
Chicken, Sausage and Bean Stew Recipe
Ingredients (serves 3)
2 bratwurst sausages (approx. 160g), meat removed from casings & crumbled
6 chicken drumlets
handful of cherry tomatoes, halved
1 can cannellini beans (410g), drained & rinsed
3 sticks celery, sliced
200g cauliflower, cut into florets
1 large carrot, diced
800ml fresh chicken broth
1 tsp coconut oil
Instructions
1. Heat oil in pan and lightly brown the sausages and chicken drumlets.
2. Add in the beans, cauliflower, celery, carrot and chicken broth. Bring to a boil and then reduce heat to simmer for 15 minutes till vegetables are tender and chicken drumlets are thoroughly cooked through.
3. Add in tomatoes and simmer for another 5 minutes before serving.
Yum! This would be perfect for a chilly, fall day.
