Another easy chicken recipe perfect for a weeknight dinner! This time, I cooked chicken with mushrooms in a tangy, fresh tomato based sauce and added dried thyme for that additional aroma. You can serve this with rice, mashed potatoes or crusty bread. It’s one dish with multiple options. Simple and clean flavours, easy and cheap to make. Enjoy!
Chicken Breast with Mushrooms & Tomatoes Recipe
Ingredients (serves 2)
2 chicken breast fillets approx. 150g each
2 tomatoes, wedged
150g button mushrooms, sliced
2 cloves garlic, minced
1/2 tsp dried thyme
corn starch solution (combine 1 tbsp corn flour + 2 tbsp water)
chicken stock (combine 1 tsp chicken seasoning powder + 1 cup water)
salt & freshly cracked black pepper
vegetable oil
Instructions
1. Marinate chicken fillets with dried thyme, garlic, salt and pepper. Chill in fridge for at least an hour before cooking.
2. Heat a little vegetable oil in pan and brown the chicken fillets on both sides. Add stock and bring to a boil.
3. Add tomatoes and mushrooms. Reduce heat and simmer till the gravy reduces.
4. Serve over rice or with sides of your choice.
Tip: Use fresh chicken stock if you have any instead of chicken seasoning powder.
