One of my favourite one-dish meals to make is Rice Cooker Chicken Rice. That is by combining and cooking rice, chicken stock, spring onions, sliced ginger, garlic cloves, pandan leaves and chicken in a regular rice cooker. This really saves a lot of time and effort than making Poached Chicken Rice Recipe the conventional way. With that recipe, I decided to put on a new spin and re-create a different chicken rice – Chicken, Mushroom and Pumpkin Rice Recipe which I am sharing today. 😀
The Secret Ingredient(s)
Seriously, it doesn’t even look like it’s from a rice cooker eh? I used brown and red rice as a healthier alternative and I highly recommend it anyway ‘cos it doesn’t go soggy easily and gives a nice chewier bite. What really lends a lovely umami flavour to this rice dish is the fried dried prawns and garlic – yep, my secret weapon.
Create Different Rice Dishes With The Rice Cooker

- 600g chicken parts (approx. half chicken)
- 150g fresh shiitake mushrooms, sliced
- 400g pumpkin, cubed
- 250g brown & red rice, rinsed
- 600ml chicken stock
- 40g dried prawns, rinsed & drained
- 1 bulb garlic, peeled & finely chopped
