My dearest Mr Guinea Pig has been frequently away from home on business. Sometimes I just feel too lazy to cook for myself. It’s not difficult to grab a takeaway as there are many food choices out there in the hawker centre and coffeeshops in my neighbourhood. But yet, I still don’t know what to eat at times. I’m probably just too fussy, lol. Anyway I decided to make a one-pot meal for myself which I could also reheat and eat the next day – really saved so much time and hassle – and that is if you don’t mind having the same thing for a few meals. And nothing beats good old-fashioned Chicken In A Pot which I use the slow-cooker to prepare. You can enjoy it on its own or serve it with rice, potatoes, pasta or your preferred sides for variety.
Chicken In A Pot Recipe
Ingredients (serves 4)
720g chicken parts of your choice (I use chicken drumsticks)
2 large yellow onions, peeled & sliced
2 carrots, peeled & sliced
4 sticks celery, cut into 1″ sections
1 tsp salt
1/2 tsp freshly ground black pepper
1 cup water or chicken broth
1 tsp dried basil
Instructions
1. Put half of carrots, onions and celery in bottom of a slow cooker.
2. Add chicken drumsticks followed by water (or broth), salt, pepper and the rest of the vegetables.
3. Sprinkle dried basil on top. Cover and cook on high for about 3 hours.
And then what you get will be tender chicken drumsticks with meat that just falls off the bone. It’s a hearty and comforting meal, yum. 🙂
