I had grilled chicken fajitas at Chili’s Grill & Bar earlier and thought to myself that this shouldn’t be difficult to recreate at home plus I still had this Amazon brand of Chipotle Sauce that I bought from Zac Meat which was good for marinating meats. So I came up with my own version of chicken fajitas – chicken was cooked as a stir-fry as I didn’t want to dry the meat up in the oven and was combined with a basic guacamole before being wrapped in a tortilla. The husband and I loved it! It was smoky, tangy, sweet and spicy and the chicken was kept moist and juicy even though I used breast. This Chicken Fajitas Recipe is really easy to make. Ditch your usuals and try out something different for dinner tonight!
Ingredients (makes 8 wraps)
300g skinless chicken breast, sliced
1 red pepper, sliced
1 green pepper, sliced
1 onion, sliced
100ml store-bought chipotle sauce
1/2 tsp ground cumin
1/2 tsp ground paprika
vegetable oil
8 wholemeal tortilla wraps
Guacamole: (combine & mix in a bowl)
3 avocados, mashed
handful of cherry tomatoes, halved
juice of 1 lemon
Instructions
1. Marinate chicken with half of the chipotle sauce and chill in fridge for a few hours before cooking.
2. Heat a little oil in pan and pan-fry chicken till meat is no longer pink. Add onions, peppers, remaining chipotle sauce, cumin and paprika. Stir fry briefly till vegetables are slightly tender.
3. Serve on wholemeal tortilla wraps (or any of your choice) with the guacamole.
Use toothpicks to hold your wraps in place if you’re making them in advance, otherwise just get everyone to wrap and roll!
Tip: Depending on the brand of chipotle sauce you are using, if you find the flavour a little bland, just need to season with a little salt.
