Cheeseburger Salad Recipe – Low Carb With No Buns

Previously, I have shared a little about my new keto (low-carb) lifestyle. Due to my change of diet, it has also affected the way I normally cook at home to the point of almost making two different meals at times. Because J prefers more carbs to fuel his intense training sessions whereas I totally skip them. When it comes to meal planning, it requires a bit more thought as it’s kinda cumbersome to cook different stuffs for different people. This Cheeseburger Salad idea came from a keto cookbook that I was flipping through at the library earlier. Thought it was an excellent dish to make as I could eat the salad while J could have it with buns. That’s killing two birds with one stone. 😉

Just Like A Cheeseburger But Without The Buns

Doesn’t this look like a deconstructed cheeseburger without the buns? 😀 It has all the components of a typical cheeseburger except pickles which I just happen to run out of. So feel free to add them in if you like.

Consume Apple Cider Vinegar Daily For Weight Loss

If you’re trying to lose weight like me, try to incorporate apple cider vinegar into your daily diet like how I’ve added it to the mayonnaise in this recipe.

Besides using acv in dressings and sauces, I also combine 1 tbsp apple cider vinegar and 1 tbsp fresh lemon juice with one cup water and drink that every day before I consume my first meal of the day. May not be a pleasant taste to those starting out on acv because it’s really acidic but once you’ve gotten used to the flavour, it’s like drinking unsweetened apple juice (well, close, lol).

Highly recommend acv because it has so many health benefits such as lowering blood sugar level, decreasing insulin level, improving metabolism, reducing belly fat and suppressing appetite. And all of these contribute to weight loss and/or weight control in the long run. 🙂

Eating Healthy Doesn’t Mean Boring

When I took a mouthful of this salad, it really reminded me of a cheeseburger as all the flavours of the different elements just came together as one. It didn’t even feel like I was dieting at all even though this was a salad as the beef, cheese and mayonnaise were really satisfying. So for all the low carb dieters out there, if you’re craving for cheeseburgers, this is one recipe to try. 😉

Cheeseburger Salad Recipe
3
  • 300g lean ground beef
  • salt & ground black pepper
  • 1 tbsp ketchup + extra as topping
  • 1 tbsp yellow mustard + extra as topping
  • 2 tsp olive oil
  • 400g romaine lettuce, coarsely chopped
  • 2 red onions, sliced
  • 3 tomatoes, diced
  • handful of cheddar cheese, shredded
  • 3 tbsp mayonnaise
  • 1 tsp apple cider vinegar
Heat oil in pan and stir fry the ground beef with salt, pepper, ketchup and mustard till meat is no longer pink. Remove and set aside.
For the sauce, combine mayonnaise and apple cider vinegar in a bowl. Stir to mix.
To assemble the salad, place the lettuce on a serving plate and arrange the onions, tomatoes, beef and cheddar cheese on top.
Add a few dabs of ketchup, mustard and mayonnaise sauce (from Step 2) to the salad and enjoy.
