I should really name these Hawaiian muffins, just like the Hawaiian pizza that we are all so familiar with. For a change, I’m finally making savoury muffins instead of sweet ones. And with the ingredients of cheese, ham and pineapples, this just resembles a pizza in a muffin. I made so many of them, I had enough to share with the parents and their neighbours too.
Cheese, Ham & Pineapple Muffins Recipe
Ingredients (makes 12 muffins)
300g self raising flour, sifted
130g grated cheddar cheese
150g sliced ham, diced
5 canned pineapple rings, diced
3 heaped tbsp chopped parsley
200ml fresh milk
125g unsalted butter, melted
1 egg
Instructions
1. Preheat oven to 200 deg C (or 180 deg C on fan). Lightly grease a 12-hole muffin pan.
2. Combine flour, cheese, ham and pineapple in a large bowl. Add milk, melted butter and egg. Mix thoroughly and then stir in chopped parsley.
3. Spoon mixture into greased muffin pan and bake for 20 mins or till toothpick inserted in centre of muffin comes out clean.
4. Let the muffins stand in the pan for 10 minutes before removing them.
The outside of the muffin has a lovely, crispy brown crust whereas the inside is all fluffy and moist. As I have used a lot of ham and pineapple in my recipe, every bite of the muffin is filled with juicy, sweet pineapple cubes and flavoursome ham. The extra touch of the parsley gives the muffins some colour and lends a lovely fresh rustic scent. Bon appetit!
This is the best cheese, ham & pineapple recipe I have found! Many recipes over the years I’ve tried turned out dry and bland but this recipe is just as you say, lovely, crispy brown crust with a fluffy and moist inside. Thank you, Geri
