I am so excited to share this cauliflower pizza recipe with you guys because it’s not just lower in carbohydrates and calories, it is simply delicious. 😀 The unique thing about this pizza is that I have used purely cauliflower as the base crust which is normally made of bread.
I love pizzas but I find the bread part can be so heavy and dense. Most of the times, the outer ring of the pizza (cornicione) is left untouched. 😳
On the other hand, this cauliflower pizza is somewhat light but filling and satisfying. And it’s of course an excellent way to increase our vegetable intake too. 😉
This is how the cauliflower pizza crust looks like after it has been baked in the oven. You can tweak the timing in the recipe depending on how ‘browned’ you want the crust to be.
First time I made this cauliflower pizza, the base was too moist hence I couldn’t slice it into pieces and eat with my hands like how we normally would with regular pizzas. Therefore when I made it again the second time, I put the cooked cauliflower on a muslin cloth (or clean dry dish cloth if you don’t have muslin) and squeezed out as much water as I could before adding the rest of the ingredients to make the dough.
Remove Excess Water From The Cauliflower For A Crispier Crust
The base turned out drier and somewhat crispier after excess water was removed. So remember if you like a drier and crispier base, you’ll have to remove as much water as possible from the cauliflower, otherwise you’ll have to eat your pizza with fork and knife like what I did the first time. Well, it didn’t really matter because it was just as yummy! 😀
- 720g cauliflower, steamed & pulverised
- 1 egg, beaten
- 1/2 cup parmesan cheese, grated
- 1/2 tsp garlic powder
- 1/4 tsp each dried oregano, rosemary, basil & thyme
- 1/4 tsp salt
- few cracks of black pepper
- 1 green pepper, sliced
- 1 red pepper, sliced
- 300g minced beef
- 1 tsp olive oil
- 2 tsp ground cumin
- 1 tsp paprika
- 2 tsp garlic powder
- pinch of salt
- 1 heaped tbsp tomato paste
- handful of shredded mozzarella cheese
