When I first tried making this salmon using the Happy Call Pan, it was a disaster as the marinate burnt and hence affected the appearance of the salmon too. This time round, I decided to pop the salmon into the oven to broil it. I was actually worried that the salmon might become too dry but it wasn’t at all. I saw some lovely ripe mangoes from the supermarket so I made a simple mango salsa to go with the salmon. Perfect pairing. This Cajun Spiced Salmon with Mango Salsa is just delicious.

Cajun Spiced Salmon with Mango Salsa Recipe
Ingredients (serves 2)
2 salmon fillets
juice of 2 limes
1/4 tsp chilli powder
1/2 tsp ground cumin
1/2 tsp paprika
1/2 tsp coriander
1/2 tsp soft brown sugar
olive oil
For the mango salsa:
1 ripe mango, diced
handful of cherry tomatoes, halved
1 large yellow onion, sliced
handful of chopped parsley
juice of 1 lime
Instructions
1. Marinate salmon with all dry ingredients. Chill in fridge for an hour before cooking.
2. Preheat oven to 200 deg C on Grill with fan. Line a roasting tray with aluminium foil.
3. Place salmon fillets onto roasting tray and drizzle olive oil over them.
4. Insert tray into oven at the highest shelf, closest to the top. Broil for 12-15 minutes or till salmon is cooked through. Serve with mango salsa.
We just love the colours on our plates. Makes the dish looks extra mouthwatering. I’m glad I broiled the salmon instead of pan-frying it as it gives the salmon a lovely brown crust on top and a juicy interior. The combination of the spiced seasoning and the sweet tangy mango salsa is nicely balanced. Definitely an easy-to-make weekday dinner! Enjoy!
