I think one of my neighbours must have recently welcomed a new little bundle of joy in the family because I’ve been smelling the aroma of Pig Trotters In Vinegar (猪脚醋) and Sesame Oil Chicken (麻油鸡) almost everyday. They are common dishes that new mommies will have when they are in confinement (坐月子) after giving birth. Supposedly help with getting rid of wind and also warming up the body. Many Chinese believe that the yin-yang principles of food is important to maintain balance and good health.
Just nice I have a bottle of Chinkiang black vinegar sitting in my pantry cupboard and I thought I would make a vinegary dish with it as well. Similar to Pig Trotters in Vinegar but a chicken version instead as I wanted a healthier choice of meat. My recipe is also good for pig trotters so go ahead and use trotters if you want.
I really like using black vinegar because it has a rich and malty flavour which makes the dish very appetising. It’s a little similar to balsamic vinegar but it has more depth to it.

- 1 whole chicken approx. 1kg, chopped into pieces
- 1 tbsp olive oil
- 80g young ginger, peeled & sliced
- 65ml Chinkiang black vinegar
- 2 tbsp dark soy sauce
- 1 tbsp + 1 tsp sugar
- 100ml water

Hi, it’s really up to you whether to keep the skin on. Doesn’t affect the recipe at all. No skin just means less fat and less calories. 🙂
Simmer for twenty minutes covered or uncovered?
Delicious. I had simmered it with the pan covered, so I reduced the sauce after removing the cooked chicken after a few minutes under the broiler.
