Happy Children’s Day! 😀 To all the little ones in Singapore (and where ever is celebrating Children’s Day today too) and all the kid-at-heart. 😉 Some mummies and daddies have probably taken the day off to spend the day with your kids. How about making a cheesy treat for them as well like this Cheesy Baked Mussels? 😉 Better still, get your kids to help in the kitchen for some family bonding time ‘cos this recipe is really easy to make.
Frozen Mussels Are Perfect For This Recipe
Bought frozen half shell cooked green mussels for this dish – for convenience sake. Purposely chose those plump and meaty ones. One good reason to use these frozen mussels is that they do not shrink as easily as live ones.
Well, if you’re using live mussels, remember to scrub them first under running tap water and remove their beards if any. Bring a pot of water to a boil and add the mussels in. Put on the lid and boil for about 3-4 minutes or till the mussel shells open. Discard those with closed shells.
These mussels are creamy with a cheesy crust on top. And if you can’t quite stand the somewhat fishy flavour of shellfish, a touch of lime juice will give it a lovely citrusy scent.
Enjoy these cheesy baked mussels and have a wonderful Friday and fabulous weekend ahead!
- 1 dozen half shell mussels, cleaned & rinsed
- 2 tbsp reduced fat mayonnaise
- 2 tbsp reduced fat cream cheese
- juice from 1 lime
- 2 tsp minced garlic
- few dashes of ground black pepper
- fresh cheddar cheese, grated
Do you defrost the cooked mussels that are frozen or do you just put them on to cook it does not tell you
I merely washed them under running tap water and that helped to defrost them.
