This Pork Collar with Crispy Garlic Sauce is an adaptation of my Sliced Pork with Garlic Sauce (蒜泥白肉) Recipe which is suitable for those who don’t like the spicy and pungent flavour of raw garlic.
After the garlic has been fried in oil, its flavour becomes milder and sweeter. Also, it kinda resembles crushed potato chips and really adds crunch to the dish. Enjoy!
Pork Collar with Crispy Garlic Sauce
Ingredients (serves 2 as one of few side dishes)
200g pork collar, thinly sliced
chopped spring onions & sliced red chilli as garnish
1 1/2 bulb garlic, cloves separated, peeled & finely chopped
1 tbsp sunflower oil
For the sauce:
2 tsp light soy sauce
1/2 tsp sesame oil
1/2 tsp sugar
1 tsp white rice vinegar
Instructions
1. Blanch the pork collar slices in boiling water till cooked through. Drain and transfer to a serving plate.
2. Combine all ingredients for the sauce and stir to mix. Drizzle the sauce over the pork.
3. Heat oil in pan and pan-fry the garlic till golden brown and crispy.
4. Top the meat with the crispy garlic and garnish with spring onions and chilli.
